Mexican Stuffed Peppers with Quinoa and Black Beans


This is one of my all-time favorite recipes. MMmmm sooo good.  4 bell peppers cut in half and stuffed will make 8 servings.  In my house there's only two of us, so one recipe goes a LONG WAY!  I usually will make this for dinner one evening, and then pack my husband and myself lunch for 2 or 3 days.  Usually it depends on just how hungry we are at dinner time.
