Now you don't have to!
Ok, so I stole AND modified this recipe from the clean eat diet. Ol' Tosca has done it again!
Her recipe makes 4 servings. Well, there's only two of us in this household, and to keep my husband and I from over eating, I cut it in half to two.
Also, she calls for flax seeds while I prefer to use chia seeds, and some other random ingredients that I don't find necessary.
Ingredients:
1.5 cups rolled oats
1/2 cup unsweetened organic almond milk
2 large eggs (use those yolks)
2 egg whites (6 tbs out of the carton)
1 tsp chia seeds
1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp cinnamon
1 scoop shakeology of your choice (I used vanilla this time but it will be tasty with any other flavor. If you don't have shakeology, don't fret. This recipe can be made without this ingredient. I choose to sneak it in for added protein. I'm going to use shakeology at some point during the day. Why not now?)
And finally, 1 cup of your choice berries. I used raspberries this time
In a food processor, blend all ingredients minus the berries. Those are for last.
Cook pancakes as normal on a skillet, or in a waffle iron if you prefer. Heck, if you have a donut maker, why not make donuts?!!
Heat the berries up in the microwave, about a minute. Just long enough that they release their juices. Top pancakes with berries and enjoy!!
