Vegetarian Chili Recipe!

This stuff is DELICIOUS and EASY!


 So it's a chili recipe, but it's more like Clean out your pantry recipe, if you catch my drift!


1 lb meatless crumbles (You can substitute Lean Turkey if you're a meat eater!)
1 diced tomato, or 1 can of diced tomatoes
1 8oz can whole kernel corn
1/2 onion, diced
2 garlic cloves
2 8oz canned black beans (I prefer low sodium Busch's Black Beans)
8oz pinto, chili, or kidney beans, canned
1tbsp tomato paste
1 pkg Chili Seasoning (read the contents carefully.  Lawri's is a good brand)
4 oz low-fat shredded cheddar cheese (optional)
   
Throw all that stuff in a slow cooker (minus the cheese), and cook!  4 hours on low, or 2 hours on high will get you done just right!  Top with 1 oz of cheese if desired.

Today I added in another can of kidney beans! I'll probably see what other things at the store I can add for next time! Can't get enough!

If you choose to use Lean Turkey instead of meatless, be sure to brown it on the stove top first, and drain before adding it to your crock pot.
