When I was a kid, I had this Children's Cook Book that was full of easy recipes for kids to make. I remember it because it was mainly breakfast foods with eggs, and the front picture was a piece of toast with a fried egg down the center. EGG IN THE HOLE.
Now, I loved egg in the hole, but I didn't really take full advantage of this delicious breakfast recipe until college. It's quick, easy, and delicious, DUH. Why not eat it every single morning???
I've got a new one for you, though. It takes Egg in the Hole to a WHOLE NEW LEVEL. This baby is delish!
Ingredients:
2 Van's All Natural Organic Waffles
2 Large Eggs
1 T EVOO
1 cup Blueberries
Pull the center out of the two waffles, and cook in the skillet like you would Egg in the hole. Don't know how? NO PROBLEM! Put your waffles down, and drop an egg down the center of each one. Be careful not to break the yolk! Flip your waffles once the egg seems to be nice and friend on one side. In the mean time, heat the blueberries in the microwave until the juices release, about a minute or so. These will act as a delicious topping for your waffles, so no need for Maple Syrup! Fry your waffles on each side, transfer to your plate, top with blueberries, and ENJOY! Don't like a runny yolk? No problem, just break that yolk while frying. OR, remove it ahead of time. :)
